The authentic Chinese almond cookie flavor is here, thanks in part to the prodigal amount of almond extract but also to the use of lard, an essential ingredient if you’re aiming for the taste that is true. Made medium-size or smaller, these, with their nontraditional crunch of chopped almonds, make a light finish for a meal, and they’re just the thing to have with a cup of tea. The well-wrapped dough keeps perfectly in the refrigerator for a few days.
