Close as you can come, in a cookie, to the brown-sugary goodness of the immortal New Orleans praline. When freshly baked the cookies are crisp, and they’ll stay that way in dry weather. With a humid turn, though, they become chewy, and I think I like them even better that way.

Method

Preheat the oven to 400°F, with an oven rack in the center position. Grease and flour one or two baking sheets.
In a mixing bowl (using a whisk) or in the large bowl of an electric mixer, beat the eggs until they are light. Gradually beat in the brown
