Ingredients: Pinch of salt; 1 tablespoon dark Jamaica rum (or medium or light rum); ⅓ cup (packed) light brown sugar; 2 tablespoons light corn syrup; 1½ tablespoons melted unsalted butter; 1 tablespoon dark Jamaica rum (or medium or light rum); ¼ teaspoon vanilla extract; 1½ cups all-purpose flour; ¼ cup cornstarch; 1 egg yolk; ½ teaspoon vanilla extract; ⅓ to ½ cup coarsely chopped pecans; 1 egg; ¼ teaspoon salt; 1 to 2 teaspoons strained fresh lemon juice, as needed; ½ cup confectioners’ (10X) sugar, sifted; ½ cup (1 stick) unsalted butter, at room temperature

If there’s no rum in the cupboard, that item can be omitted from the filling of these miniature nut pies; however, it does add a subliminal something to the combination of pecans and brown sugar. If you delete the rum, increase the vanilla to ½ teaspoon, a better strategy than using artificial rum flavorings.

Preheat the oven to 350°F, with an oven rack in the center position. Cut two 12 x 16-inch sheets of aluminum foil. Cut the foil into 24 squares measuring 4 x 4 inches each. Set them aside.
