Ingredients

  • 4 eggs
  • 3 tablespoons good fat
  • ½ cup onion
  • ½ cup celery
  • ½ cup green pepper
  • ½ cup mushroom

Method

Brown chopped onion lightly in fat. Stir chopped or minced vegetables lightly into eggs. Let get firm and brown in pan, stirring up center once in a while. Cut into sections and serve quickly.
