Ingredients

  • 2 tablespoons butter or good oil
  • 1 sweet onion, minced
  • 1 pair veal kid

Method

Wash kidneys and cut into little pieces. Brown the onion in the fat and add the meat. Add seasoning (salt, pepper, fresh-chopped parsley or basil or whatever herb you like). Add the sherry and simmer five minutes. Serve very hot, with the watercress as a garnish.
