Ingredients: lemon wedges and focaccia, to serve; 60 ml /4 tbsp olive oil; 2 cloves garlic, peeled and crushed; 5 ml /1 tsp mustard; juice of 1 lemon; 1 egg yolk; 150 ml /¼ pint/⅔ cup sunflower oil; 600 g /1 lb 6 oz fresh squid, cleaned weight; 2.5-5 ml/½-1 tsp chilli powder; 30 ml /2 tbsp fresh oregano or marjoram leaves, roughly chopped; rind of 1 lemon, very finely grated; salt and ground black pepper

This squid, in its punchy marinade, is deliciously tender with a slight charring. This is a great recipe to use as an appetizer before using the oven to rustle up some pizzas or searing some steaks, so you’re not firing up the oven for a 40-second cook-off.
