Sourdough makes fantastic bread with good flavour and texture — it keeps well and makes the best toast. The bread is helped to rise by natural yeasts that feed on a starter of flour and water; the fermentation process can be quite slow, depending on the weather and the ambient temperature, but it is definitely worth the wait. You need to make the starter at least three days before you bake your bread.
