This is another loaf using baking powder as a raising agent, so it is a quick and easy bread for the wood-fired oven. You can also try the recipe with mashed sweet potato, which gives a beautiful golden colour, and hard goat’s cheese. The potato keeps the bread moist, while the oven crisps up the golden brown crust, with the cheese melting over the top. Serve with pickled onions for a rustic lunch.
