This versatile glaze could be used on most fruit cakes to bring out the flavour -I use it on a cake such as Greek Fig Cake. Different honeys will give you different flavour notes.

Ingredients

  • 100 g (3Β½ oz) good-quality apricot jam
  • juice of 1 lemon

Method

  1. Simply place all the ingredients in a pan and bring to the boil.
  2. Pass through a sieve and then brush repeatedly on the top of your cake to form a glaze.
