This fabulous cake will be familiar to many people, particularly those in the south of the USA, and always seems to be on the favourites list as it works really well as a cupcake too. It’s a stunner of a centrepiece for an afternoon tea party or dinner party dessert. The secret is to get the deep red colour just right. Some food historians think the red colour originated from times when sugar was scarce and beetroot was used as a sweet substitute.
