This smooth Caribbean fruit cake is unlike any fruit cake you will have ever tasted before, since the dried fruit is blitzed beforehand (in a food processor). And it is certainly not for the faint-hearted, since it’s drenched (literally) in alcohol. As with many fruit cakes, this one is traditionally served at Christmas in Jamaica and neighbouring islands; but it also turns up as a wedding cake.
