Just the sunshine yellow skin and the wonderfully sweet taste of an Alphonso mango are cause for celebration, so it seems unfair that their growing season is so short - from late March to June. India is the largest worldwide producer of mangoes and during mango season (which heralds the start of summer) they are served up in all manner of savoury and sweet dishes. Even if you can’t get hold of the Alphonso mango, just be sure that the mango you use is ripe and ready.
