A popular choice for vegetarians from South India, this healthy stew is often served for breakfast with appam (also know as hoppers – lacy rice pancakes) or dosa (savoury gram flour crêpes), but it can just as easily be served throughout the day. It is a delicious combination of seasonal greens and coconut milk finished with South Indian spices, and is very quick to make.
