A perfect winter-into-spring recipe that makes the best of the wild garlic. It is hugely adaptable - beef it up by stirring through steamed sprouting broccoli, a handful of chopped parsley and/or top with a just-poached egg to serve. Alternatively, you can substitute the wild garlic with spinach, kale, Mexican tree spinach or other leafy greens, adding a little chopped garlic with the pearled spelt.
