I guess I make celeriac mash about three times more often than I do potato mash and if you make it once, I suspect you might too. This is a perfect partner for many, many things — from fish to roast veg, to sausages or the beef stew. If you only have semi-skimmed milk, add a splosh of cream for velvetiness, and by all means stir chopped parsley through if you like.
