Loin of lamb with lavender & lemon thyme

I’m not sure I’d have risked a lovely loin of lamb by pairing it with lavender had friend and food writer Nikki Duffy not made this for me. It was a total knockout, but if you don’t fancy lavender it also works very well with rosemary instead.
