I first made this with asparagus and its simplicity and flavour make it one of those recipes I keep coming back to throughout the year - it works equally well with bamboo shoots, chard stalks or green beans. Here, garlic scapes replace the asparagus. As garlic grows, it throws up a stalk, at the end of which a flower develops - scapes are the top 15-20cm of those stalks.
