Now here’s a prince of a breakfast, lunch or supper and there’s not many recipes can say the same. When I told a friend, a cook, that I was messing with Eggs Arnold Bennett, he told me I’d better name it Eggs Gordon Bennett to warn people. Classic as Arnold Bennett may be, I just think the pea shoots make it that little bit more special. Try it and see. A leafy salad goes very well with it.
