If you do only one thing with sorrel, try this: it’s the best sauce for new potatoes, it takes no time at all and converts everyone to sorrel’s lemon freshness. Later in the year when potatoes tend to be less waxy, try wilted sorrel stirred through mashed potato.
Boil the potatoes until just cooked - this can be as quick as 8 minutes for small, fresh new potatoes, so check them early.
If the sorrel has a substantial central rib, strip it out. Shred the sorrel roughly.
