If you have small-leaved lime (Tilia cordata) growing near you, I urge you to try its beautifully nutty early leaves. By no means powerful, they just provide the gentle flavour and fine texture for the other flavours to work against. More lettuce leaves will certainly do instead if you’ve no small-leaved lime to hand. Whatever you do, make the main leaves gentle - you are after a sea of subtle leaves punctuated with islands of intense flavour.
