Dressings are, essentially, mini savoury cocktails that need to be well balanced. This one is sharp, sweet, punchy and good with virtually everything. It is our ‘reach-for’ dressing; there is invariably a jar or bottle of it sitting in the kitchen, always fresh as it gets used so quickly.
Whisk the cider vinegar, mustard and honey together. Add a good pinch of salt and pepper and whisk a little more. Add the olive oil and whisk briskly until the mixture forms an emulsion. Check the seasoning.
