If there’s anything more than a hint of warmth in the air, this is the dressing for asparagus, peas, early leaves and even strawberries later in the summer.
Whisk the elderflower cordial and vinegar together with some salt and pepper. Add the olive oil and whisk until the mixture forms an emulsion. Taste for seasoning.
