Elderflower delight

I first came across a brilliant elderflower variation on Turkish Delight in John Wright’s River Cottage Hedgerow Handbook. Its flavour captures the essence of elderflower perfectly, and the melting texture is heavenly. My version is a little less sweet, a little more elderflowery and uses cream of tartar instead of gelatine. Try it with scented geraniums - especially Roses
