I think in all my many years I’ve only ever met or heard of one person who didn’t like fudge (yes you, Fiona KP). It is almost impossible to dislike. Make your own and I think we can drop the ‘almost’.

The core recipe here works beautifully with different nuts, spices (try a few teaspoonfuls of fennel or sweet cicely), chocolate or just vanilla. One thing: invest in a cook’s thermometer if you don’t have one - they take the guesswork out of making fudge and preserves.
