If you keep chickens, you’ll be familiar with that occasional build up of eggs when the hens are being productive. This is what to do with those excess eggs. If you don’t keep hens, this is a fine excuse to buy some extra free-range eggs.

The core recipe works with many other ingredients — potatoes, chorizo, wild garlic and asparagus among my favourites. A great deal of pepper is compulsory. A crisp Little Gem or two, dressed only in olive oil and salt, is recommended.
