Along with the Martini, I can think of no better cause for the cucumber to surrender itself to than this ice cream. It is just so refreshing. The mint doesn’t dominate, it just adds a little extra layer of cool to the cucumber. Add more if you like (and/or a little salt, lovage seed or lime) and it will be good, but I prefer it simple, as it is.
