This reminds me of the stretchy chews I ate on far too many journeys into school. Leathers are good with pretty much any fruit – raspberries, blackberries and blackcurrants are the most common versions we make, although I’m not sure why we don’t make apricot leather more – it’s equally fine. Fruit leathers freeze very well in a sealed container and keep for around a year.
