There are several pertinent rules when it comes to drinking: one is one, two is ten; always ascend the alcoholic ladder (never drink a weaker brew next); never mix the grape and the grain. Only this latter rule may be bent a little from time to time, and this cocktail is one of those occasions. That said, the greengage smash is not one to overindulge in.
Use a wine with a degree of sweetness to it – a Gewurtztraminer or Riesling, maybe. I last made this with the Somerset Cider Compa
