I love chicken cooked in milk. The results are unfailingly succulent. This recipe is also a nod to chicken véronique, that old favourite where chicken is cooked with grapes. You can lean the core recipe any way you fancy: the sweet white wine, herbs, olives and grapes can be replaced with cider, lemon, lemon thyme and apples, or whatever you like.
