Sprout tops are one of my favourite and most flavoursome vegetables. With a texture of spring greens alongside a sweet nuttiness, they are delicious and perhaps even more versatile than the sprouts themselves. You can cook them in advance and plunge them into cold water to fix the colour and stop them cooking further, then mix with the other cooked ingredients and warm through to serve. This is a fine lunch or a great side.
