As much as I love sprouts as a buttery side, in coleslaw or pushed around a pan with bacon or chestnuts, this may be my favourite way with them. Try it with kale leaves too – they are superb. It’s hardly a recipe, it’s so simple.
Strip off any discoloured or damaged leaves, then slice off the base of each sprout. The outer leaves should, for the most part, fall away easily; set these aside. Slice another coin from the base, and pull away more leaves. Continue until the c
