I really ought to pickle more fruit. The pickling blend of sharp, sweet and aromatics suits so many, and none more than apples. This recipe is vague – the weight of apples needed depends on the variety, and you may prefer a sweeter flavour, so do adjust the core recipe as you like. It’s particularly good alongside pork or hot-smoked mackerel.
