Known as membrillo in Spain, this sweet, firm delight is typically served with cheese, game or cured meats. Don’t tell the Spanish, but it can also pass as a posh fruit pastille – let a small piece, rolled in sugar, dissolve on your tongue. It’s a fabulous filling for doughnuts, too.

Quince paste is easy to make and lasts for months, certainly over a year, in an airtight container in the fridge. You can use any number of quinces as the ingredients
