A gorgeous tart that can be adapted to whatever fruit you have. If you don’t grow autumn olive, either up the weight of grapes or substitute with any fruit you like, as long as you keep to the 500g total. Strawberries with a little elderflower cordial, and gooseberries, are the other variations I make most often earlier in the year. Ease back on the caster sugar in the filling if using sweet fruit, or nudge it up 10g if making the tart with early gooseberries.
