What better way to use a few late-season apples than cover them in toffee? Sprinkle them with a few fennel seeds is the answer. That gentle aniseed sets them alight, it’s so good. Caraway works well too, as do crushed sweet cicely seeds. You need to work quickly to twist the apple to coat them in toffee – it’s a dull fact that the toffee gets quickly immobile until you sit the apple on parchment paper when half seems to happy to slip off the fruit.
