Horseradish cream is a lovely sauce to serve with roast beef, adding a welcome piquancy to the dish. Make before starting to cook the beef, as this allows the flavour to develop.
In a small bowl mix together all the ingredients except the salt and pepper. You should have a thick cream. Cover with cling film until ready to serve. Just before serving check the seasoning and add salt and pepper to taste.
