Heat oven to 220°C/425°F/Gas 7
In a large mixing bowl, beat the eggs, salt and milk together. In a separate bowl, mix the flour, cornflour and gum.
Beating constantly, slowly add the flour mixture to the egg and milk and continue to beat until a smooth, lump-free batter is formed.
Put a pea-sized piece of lard, dripping or ½ tsp oil into a tart, muffin tray or 25cm x 30c
