These are the stuffed pasta of Liguria. They are stuffed with ‘preboggion’, which is a mixture of fresh local wild herbs (borage, parsley, chicory, mint, sage and others), plus ricotta, eggs and Parmesan. They are traditionally dressed with salsa di noci – walnut sauce (click here).
