Ricotta salata

Ricotta salata is ricotta made from sheep’s milk, slightly salted and hung until dry. It is widely used in Sicily and in southern Italy, usually grated, just like Parmesan and pecorino. It is difficult to find outside Italy, but can be bought in some Italian delis and online.
