In the American southwest, these chiles used to be known as the “Santa Fe Grande.” They are an excellent fresh chile for beginners because they are on the sweet and mild side, but still pack that fresh chile flavor, especially when charred. They are a little fatter than a jalapeño. Look for chiles that have a thick, juicy-looking skin.
