These two fresh chiles are the most popular varieties to use in the salsas you will find in a carne asada. They can be used interchangeably in recipes and taste great both in their raw and charred state. We prefer serranos for their higher level of heat and grassier flavor. Look for serranos that are firm, plump, and free of wrinkles.
