This is the most indispensable ingredient in the universe of Mexican food but in a carne asada, key limes make virtually anything taste better. These smaller, golf ball–shaped limes have a more tropical flavor without much bitterness, so we prefer these when they are available. Look for limes with no brown leathery splotches, which are an indicator that they are on their way out and taste unplesantly oxidized. Always make sure to offer sliced limes at a carne asada spread so that your guests can squeeze away at their hearts’ content.
