This is arguably the best chicken cut because it is so affordable and delicious. The “dark meat” muscle is considered a tougher cut, although it also has a higher amount of fat—way more than lean chicken breast. This translates into a rich flavor and tender texture that is almost impossible to overcook. The skin acts as a protective shield of sorts to prevent the chicken from drying out.
