Chinese long beans are like long green beans, pale to dark green and about 18 inches long. They have a mild, grassy flavor and a lot of crunch, though they do not “snap” as regular green beans do. You can find these beans in large bunches in most Asian markets. You can substitute green beans, though they are quite different in both taste and texture.
