Coconut juice—not to be confused with coconut milk—is the slightly sweet, floral juice from the inside of a coconut. It is almost as clear and thin as water. I like the Bangkok Market brand, which is sold in the freezer section of well-stocked Asian markets, because it contains large chunks of fresh coconut meat. Other canned brands on the shelf often contain additional preservatives and sweeteners that alter the subtle, fresh taste of coconut juice.
