Curry pastes (red, green, and yellow) are mixtures of fresh and dried vegetables, herbs, and spices. The red pastes are made from red chiles, the green from green; yellow contains turmeric. Curry pastes taste best when they are made fresh, but store-bought pastes work fine if you are short on time.
