Dried shrimp are pinkish orange and tiny, about a half inch long. They have a strong fish odor and flavor and add a rich saltiness to dishes. Though dried, they do not keep indefinitely, so avoid any that are beginning to brown and store them in an airtight container in the refrigerator. Larger dried shrimp, which are about an inch long, are highly prized and have a more delicate flavor, but the difference in cost is only worth it if you really love the taste. Dried shrimp are available in most Asian markets.
