Shrimp paste, called gkapbi in Thai and belacan in Malay, is made from dried, fermented ground shrimp and is sold in jars or plastic-wrapped bricks. Its color ranges from dark pink to dark brown and it is the texture of soft clay. It has a strong fermented shrimp odor and an equally strong salty shrimp flavor. For most people, its smell and taste are acquired ones, though small amounts mixed into cooked dishes add a wonderful sea-saltiness.
