Sticky rice, sometimes also known as glutinous rice or sweet rice, is an opaque white grain that is short and stubby in the Chinese and Japanese varieties and long or “broken” in the Thai Jasmine varieties. The whole grains are soaked, then steamed (usually in cheesecloth) until sticky and chewy. High-quality brands from Thailand are available in most Asian markets, but Koda Farms in California also makes a good sticky rice that is available in most major supermarkets.
