Sumac comes from the bright, red berries of an evergreen that grows in the Mediterranean (and in the U.S.) and tastes intensely sour and fruity, like a strong lemon. The berries are dried and ground into brick red sumac powder. Commonly used in Middle Eastern cuisine, sumac adds a refreshing tartness to dishes.
